On May 5, 2018, the restaurant maximilian lorenz and the heinzhermann wine bar opened as a new address for gourmets in the heart of Cologne - the latter bears his first names two and three, traditionally the call names of his grandfathers. Between the cathedral and the Rhine, in the completely redesigned rooms of the former "Wein am Rhein", Maximilian Lorenz and his team are focusing on a new concept with deep roots: German cuisine!

At the age of just 21, Maximilian Lorenz took the plunge into self-employment in the spring of 2012. "With 'L'escalier', I had the opportunity to take over a restaurant with an excellent reputation at an early stage. The young chef showed respect for this challenge as well as the self-confidence that comes from a solid education in one of the best restaurants in the region. Under Christopher and Alejandro Wilbrand, Maximilian Lorenz rose to the position of sous chef at the hotel restaurant "Zur Post" in Odenthal in a very short time after his training. The "Post" has been awarded a Michelin star for years and is well known among gourmets far beyond the borders of the Bergisches Land.

Maximilian Lorenz names Dieter Müller and Christopher Wilbrand as role models in the kitchen: "The perfection and love of the products has always fascinated me about Dieter Müller. His culinary creations, which leave the inherent flavor of the products unchanged, have not made him a cooking legend for nothing." What Maximilian Lorenz appreciates most about his master chef Christopher Wilbrand is his qualities as a host: "He succeeds in making the meal an experience for his guests - and not just a meal."

In his very first year, Maximilian Lorenz was named "Chef of the Year" in Römer's Restaurant Report and "Newcomer of the Year" at GUSTO. Until April 2018 Maximilian Lorenz and his team cooked at L'escalier with one star in the Guide Michelin and 16 points in Gault&Millau.

With its catering and event branch, Lorenz has been delighting its customers since 2019, whether for a candlelit dinner for two or a major event lasting several days with 5,000 guests. With the maximilian lorenz foodtruck, which can be operated 100% self-sufficiently, even greenfield events are possible.

As the owner of wine shop maximilian lorenz, diagonally across the street from his restaurants, and as a partner in the Alter Lindenhof in his hometown of Bergisch Gladbach, Maximilian rounds out his entrepreneurial as well as gastronomic portfolio.

In March 2022, Lorenz expanded its gastronomic portfolio with another restaurant, ML Street kitchen serves healthy and balanced street food dishes such as bowls. The motto here is to conjure up healthy, sustainable and delicious dishes. Therefore, refined sugar and flavor enhancers are completely avoided!

From 2017 to 2021, Enrico Hirschfeld will be in the kitchen alongside Maximilian Lorenz, forming a congenial duo with him. Together they develop ideas of modern culinary art, a new German flavor cuisine.

In October 2021, Maximilian Lorenz will once again assume sole responsibility in the kitchen to continue on the successful path he has taken.

In March 2022, Lorenz added another restaurant to its gastronomic portfolio; ML Street kitchen serves healthy and balanced street food dishes such as bowls, ramen and porridges.
